Food and drink constitute a culture in themselves, as well as being essential to our daily welfare. Anchored deep in every German’s consciousness are certain dishes that have become accepted as true "classics" - such as "currywurst" (chopped sausage with ketchup and curry powder), goulash, Wiener schnitzel and "frikadellen" (rissoles) with potato salad "like mother makes".

RUHR.2010 will, however, be creating opportunities to completely rewrite the menu with new dishes that all have what it takes to become a classic of the future and in keeping with the requirements of the 21st century. The criteria are that they will need to be healthy, nutritious and light in equal measure. Above all, they will need to be tempting enough to make everyone's mouth water. And they must be sufficiently easy to make that everyone can try them at home. No simple task. Hence it will be a case of getting the best to show us how it's done.

Ten internationally famed stars of haute cuisine and allied culinary arts, "grand chefs" all, will create their own personal contender recipes. Then, two different dishes will be tested in each of the five metropolitan "hubs" by a team of specialists who will also be offering their suggestions for refinement and regionalisation. These teams will comprise an array of stars of the culinary scene, renowned local chefs, food experts, keen amateurs and celebrity gourmets.

In spring 2010, the newly conceived dishes will then be presented to the public at large. They will be included as supplements to the normal menus offered by restaurants of all types, as well as being made available at different events, so that both the inhabitants of and visitors to the Capital of Culture can sample them to their hearts' content.

By autumn 2010 we should have found out which of these five inner hubs of the Ruhr Metropolis has been blessed with the most popular dishes. Each of the ten dishes will also have an opportunity to establish itself as a new "classic" throughout Europe - serving as a permanent reminder of the Capital of Culture, the Ruhr Metropolis and its inhabitants.
